The New York Post sat down with the Birch Guys and got the inside scoop of what it took to bring to life Birch Coffee. Paul Schlader and Jeremy Lyman both decided to open up a coffee shop despite the fact that “We were so green,” says Schlader. “I can’t stress enough that we didn’t know what we were doing.”
