Jeremy Lyman, General Manager

Jeremy traces his coffee obsession back to his youth, when at the tender age of two, his grandma Fritzy started spooning him tastes of her coffee ice cream. He was hooked immediately.

Also from the get, Jeremy has appreciated the importance of community and longed for its invaluable sense of belonging. It was that very desire for connectedness that inspired his idea for Birch Coffee's unique social environment. Jeremy hopes to provide a place where people can escape the busyness of the world and get in touch with whatever's important to them, even if it only lasts as long as it takes to drink a cup of coffee.

 

Paul Schlader, Operations Manager

Paul also points a loving finger at French grandma, Kocka. At the age of nine, he discovered his passion for food while sipping coffee in her kitchen. And he attributes the other side of his family with his lifelong appreciation for local farmers. He’s logged many hours on grandpa Schlader’s Wisconsin apple orchard.

Paul’s commitment to overall wellness, coupled with his childhood loves, drives his vision for Birch Coffee. He hopes to do his part in giving back to the community by sharing the elements of what makes his life so good—spiritual health, sustainable practices and a positive attitude.
